Creamy Cucumber Salad with Crunchy Chickpeas

This salad is crisp, refreshing, healthy and delicious, not to mention that it’s one of the best things we ate on vacation. The crisp cucumbers and silky avocado dressing mixed with crunchy chickpeas and creamy feta is a match made in heaven. The best part is that it’s so simple and only requires a few ingredients! What You'll Need:

+ 3 Cucumbers, diced

+ Fresh Mint, torn

+ Fresh Dill, torn

+ French feta for garnish

+ Sumac & paprika for garnish


+ 1/2 cup EVOO

+ 3 tbsp. white balsamic vinegar

+ 1 avocado

+ 1 tsp. lemon juice

+ Salt & pepper to taste

+ 2 tsp. honey (optional)

*Blend or mash with a fork – works both ways!*

Crunchy Chickpeas:

+ 1 can chickpeas, strained & dried

+ 2 tbsp. EVOO

+ 1 tsp. salt

+ 1 1/2tsp. paprika

+ Pinch cumin

Air fry at 425 degrees for approximately 10 minutes *shaking halfway through*
