Crunchy Asian-Inspired Chicken Lettuce Wraps

These Crunchy Asian-Inspired Chicken Lettuce Wraps are one of my favorite weeknight dinners of all-time! This dish is always part of my order when dining out at some of my favorite restaurants so I knew I had to create a comparable version at home. While this recipe does require quite a few ingredients, it’s actually very easy. Once the prep is done theses delicious chicken lettuce wraps come together in no time. They’re a family favorite in our home and always part of our weekly dinner rotation. They’re easy, flavorful, light, and so delicious.

Ingredients

First you’ll want to prep all of your ingredients. The onion, water chestnuts, and carrots will be diced up. Don’t worry too much about the size of the dice. The general rule of thumb here is about 1/4″ cube for each. Next up are the snap peas and green onions that need to be sliced, the water chestnuts that needs to be chopped, the ginger that needs to be grated, and the garlic that needs to be minced.

I also like to measure out all of my liquid ingredients ahead of time (EVOO, sesame oil, soy sauce, hoison sauce, sambal, and rice wine vinegar) so that I’m not scrambling to measure while the chicken is cooking! Of course that means I use A LOT of measuring spoons – these are my personal fave and guess what? They’re almost identical to a similar set I bought years ago but a lot more cost effective.

For the lettuce cups, you can use butter lettuce, iceberg, or romaine. I used butter lettuce in the video but I swap them out depending on what I have on hand. Romaine and iceberg provide a bit more crunch which I love. Another great thing about this recipe is that you could also make it into a bowl and serve the ground chicken over rice with a side of broccolini or asparagus. Speaking of the protein, I tend to use ground chicken for this recipe but turkey would be a great swap if preferred. The options are endless!

This dish is the perfect weeknight meal that packs A LOT of flavor. I hope you share them with friends and family, I guarantee they’ll be a hit! What You'll Need:

+ 2 tbsp. olive oil

+ 1 lb. ground chicken

+ 4 cloves garlic, minced

+ 1 knob ginger, grated

+ 1/2 onion, diced

+ 2 tsp. sesame oil

+ 2-3 tbs. soy sauce

+ 1/4 cup hoisin sauce

+ 1 tbsp. sambal

+ 1 tbsp. rice wine vinegar

+ 1 can water chestnuts, diced

+ 1/2 cup carrots, diced

+ 1/2 cup snap peas, thinly sliced

+ 3 green onions, sliced

+ 1/4 cup slivered almonds

+ Lettuce cups for serving (I use butter lettuce, iceberg, or romaine)

+ Salt & pepper to taste

Steps:

1. In a large skillet over medium heat, add olive oil and brown chicken. Season with salt & pepper and break it apart as it cooks.

2. Add garlic, ginger, onions, soy sauce, hoisin sauce, sesame oil, sambal and rice vinegar – stir to combine.

3. Add carrots, snap peas, water chestnuts, slivered almonds and green onions – combine and cook for approximately 3-5 minutes or until veggies are slightly tender (I personally like the carrots crunchy).

4. Serve on crisp lettuce cups and garnish with additional green onions, slivered almonds, crunchy rice noodles and so sauce. Enjoy!
