Ground Beef Ingredients

  • 1 tablespoon Avocado oil
  • 2 pounds 90/10 ground beef
  • 2 tablespoons taco seasoning
  • ½ white onion, diced

Cheese Sauce Ingredients

  • 2 cups whole milk
  • 3 ½ cups sharp yellow cheddar cheese and pepperjack, grated
  • 2 tablespoons cornstarch mixed with 1 tbsp water
  • 1 can diced green chilis
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne

Pico de Gallo Ingredients

  • 3 large tomatoes
  • ½ large white onion, finely diced
  • 1 jalapeno or serrano, seeded and finely chopped (adjust based on preference)
  • Juice of 2 limes (4 tbsp.)
  • ¼ cup cilantro, chopped
  • Salt to taste
  • Pepper to taste

Toppings & Additional Ingredients

  • Homemade Guacamole
  • Pickled jalapeno rounds
  • Crema or sour cream
  • 1 bag tortilla chips

Step-By-Step Recipe Method

  1. In a large skillet over medium high heat, add avocado oil and onions. Cook for 3 to 4 minutes or until translucent. Add the ground beef, break up with a spatula, and cook until completely browned (about 8 to 10 minutes). Drain the fat and then add the taco seasoning and ¼ cup of water. Stir to combine then set aside.
  2. In a medium saucepan, bring milk to a simmer over medium-high heat, stirring occasionally to avoid burning. Add the spices, salt, and pepper and whisk in the cornstarch slurry. Simmer for 2 minutes then slowly whisk in the cheese. Once the cheese is melted and the sauce is creamy, add in the diced green chilis. Stir to combine and taste for seasoning.
  3. To assemble, place half of the tortilla chips onto a large platter and layer half of the ground beef, nacho cheese sauce, and pico de gallo. Repeat this process and top with guacamole, pickled jalapeno, crema or additional toppings of your choice.
  4. Serve and enjoy!
