This Crunchy Red Cabbage Salad requires minimal ingredients and is perfect for feeding a crowd. It’s become a family favorite of ours because it’s so delicious, thanks to the incredibly flavorful apple cider vinegar dressing. The best part is that this festive and simple salad tastes just as good (if not better) the next day! This recipe is a great option when you’re feeling like something healthier and light, but don’t want to sacrifice on taste.

How To Make Crunchy Red Cabbage Salad

Ingredients – For The Dressing

  • ½ cup extra-virgin olive oil
  • ¼ cup apple cider vinegar
  • 1 tablespoon honey (you can add more if you prefer it to be sweeter)
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

Ingredients – For The Salad

  • 1 head red cabbage, thinly sliced
  • 1 ½ cup walnuts or pecans
  • 2 apples, julienned
  • Goat cheese or Parmigiano-Reggiano for garnish (optional)

Step-By-Step Method

  1. In a small bowl, combine the olive oil, apple cider vinegar, honey, lemon juice, salt, and pepper. Whisk to combine, about 30 seconds.
  2. In a separate large bowl, add the red cabbage and pour half of the dressing over the top. Toss to combine until thoroughly coated.
  3. Add the walnuts (or pecans, if using), apples, and the remainder of the dressing. Enjoy as-is, or garnish with goat cheese or Parmigiano-Reggiano. Enjoy!
