Nana’s German Potato Salad

You guys all fell in love with my Grandma’s viral Crunchy Lemon Parmesan Salad and it’s made her SO happy which I’m very thankful for. She is not only the most amazing cook, but also THE most amazing woman that I know. Although she has Hispanic roots and owned a Mexican restaurant in La Jolla, she also worked at a wonderful German Restaurant called The Rheinlander Haus. She made some lifelong friends there and picked up some amazing recipes. Her potato salad has been a family favorite for as long as I can remember and my mom and I made it today. One of the things that I think is so beautiful about cooking and food is that recipes can be passed down from generation to generation. While that’s true, tweaking them and adding your own creative spin is all part of the fun. While we were in the kitchen today my mom reminded me that “there’s no right way” to do things and that’s something I think is so important to remember. When you’re cooking, never forget to experiment and have fun! This potato salad is delicious; unique in flavor and is all about following Nana’s method so that it comes together while still warm (although it’s actually best served chilled). It’s simple and perfect for entertaining! You’ve got to try it!

What You'll Need:

+ 3 lbs. potatoes (we used red potatoes and Yukon gold)

+ 1/2 red onion, diced

+ 4 strips of bacon, well done and chopped

+ 6 green onions, sliced

+ Salt and pepper to taste (generously salt)

+ 1/4 tsp. white pepper

+ 1/4 tsp. of celery seed

+ Pinch of sugar

+ 1/2 bushel curly parsley, chopped

+ 1/2 cup Swiss cheese, cubed

+ 1/4 tsp. whole grain mustard

+ Chives, for garnish

+ 1/2 cup ACV

+ 1/2 cup EVOO

+ 1/4 cup warm water

Note *It’s important to add the liquid ingredients to the potatoes while they’re still hot so that it becomes creamy.
