No Bake Oatmeal Candy Cookies

No Bake Oatmeal Candy Cookies recipe is perfect for dessert

It doesn’t get any easier or more delicious than these No Bake Oatmeal Candy Cookies that come together in under 10 minutes. They’re a special family recipe that uses one of my favorite classic pantry staples – oats. They’re great for the holidays but really make for a delicious snack any time of year! What You'll Need:

+ 3 cups Quaker Quick 1-Minute Oats

+ ½ cup whole milk

+ 1 cup granulated sugar

+ 1 tsp vanilla extract

+ ¼ cup margarine (it’s very important to use actual margarine because it stays smooth and soft when it’s room temp or cold. If you use butter the texture of the cookies is all wrong)

+ ½ cup smooth peanut butter

+ 5 Tbsp cocoa powder

+ Unsweetened shredded coconut (for topping)

Steps:

1. In a medium pot combine margarine, milk, sugar, and vanilla extract. Over medium heat, bring the mixture to a rolling boil. Let cook for 1 minute until the sugar is dissolved and the ingredients are well combined.

2. Turn off the heat and carefully stir in the peanut butter, cocoa powder, and Quaker Quick 1-Minute Oats. Mix until everything is well combined.

3. Using a small cookie scoop or two spoons, quickly drop mounds of the cookie batter onto parchment paper. Shape and gently press down to form circles. Top with unsweetened shredded coconut and refrigerate for a minimum of 30 minutes. Enjoy!
