Peach Pesto Burrata Sandwich

This Peach Pesto Burrata Sandwich is perfect for when it’s just too hot to cook. Whether you’re looking to level up your lunches or just want a quick and easy dinner idea, this sandwich is both crunchy and delicious. It’s the perfect blend of sweet and savory, you have to try it! What You'll Need:

+ Baguette

+ Homemade Pesto

+ Crispy Prosciutto

+ Arugula (dressed in EVOO & salt)

+ Peaches

+ Burrata

+ Salt & Pepper

+ EVOO

+ Balsamic Glaze

Pesto Recipe:

+ 2-3 Cups Fresh Basil

+ 3/4 Cup of Freshly Grated Parmigiano Reggiano (do not use pre-grated it makes all the difference)

+ 3 Cloves Garlic

+ 2-3 tbsp. Pine Nuts (toast them until golden if time allows. If you’re allergic to nuts, you can totally leave these out and just use a bit more cheese for thickness)

+ Eyeball the Extra Virgin Olive Oil based on desired thickness

+ Generous Amount of Salt & Pepper to Taste

+ 1 tsp. Crushed Red Pepper (optional)

Steps:

1. Combine basil, garlic, and pine nuts in a food processor until fine.

2. Add half of the Parmigiano in, turn the processor on, and drizzle in the olive oil until you’ve reached your desired consistency.

3. Add the remaining Parmigiano and process very quickly or fold into the sauce – this adds a nice texture. Season with salt & pepper to taste.

For the Crispy Prosciutto: Pan sear on medium/medium high heat with a small amount of olive oil until crispy on both sides.
