Simple & Delicious Spicy Spaghetti

spice it up fresno chili pepper spaghetti bucatini pasta recipe

You guys… this Simple & Delicious Spicy Spaghetti is one of our favorite pastas and it has a very special story behind it. It’s our recreation of our favorite dish from Union in Pasadena, which is where we’ve celebrated most of our date nights since it opened. There’s truly nothing like it and if you haven’t been to Union yet, IT’S A MUST! Until you’re able to make it in person, you’ve got to try making this at home! It’s unique, flavorful, and has the perfect amount of heat. This might just be our favorite pasta yet… TIME TO GET COOKING! Enjoy!

What You'll Need:

+ Bucatini or Spaghetti, fresh pasta is best for this (and what they make in house/serve at Union) but a good quality dried pasta will work also

+ 3 tbsp. Olive Oil

+ 2-3 Cloves Garlic, thinly sliced

+ 1 tsp. Crushed Red Pepper

+ 1 Fresno Chile, halved

+ 10 large Basil leaves

+ 4 cups canned San Marzano Tomatoes, puréed

+ Dab (or two) of Butter

+ Pinch of Salt

+ 1/4 cup freshly grated Parmigiano Reggiano

+ Approx. 1/4 cup Pasta Water (more or less depending on desired consistency)

+ Garnish with additional Parmigiano Reggiano and fresh Basil

1. Sauté garlic, red pepper, and Fresno Chile in olive oil over medium heat until garlic begins turning golden.

2. Add basil, tomato purée, pinch of salt, and butter. Combine and let simmer.

3. Cook pasta just under al dente and make sure you heavily salt your water (it should taste like the sea). Reserve your pasta water.

4. Add pasta directly to the sauce, stir, and simmer on low for a few minutes (pasta will continue cooking). Once fully combined turn the heat off and add parmigiano reggiano and pasta water, stir quickly to combine.

5. Plate and garnish with fresno pepper from sauce, lots of parmigiano reggiano, and fresh basil.
