Strawberry Salad with Lemon Poppyseed Dressing

Run, don’t walk and make this delicious summer salad that’s a true crowd pleaser! It’s crunchy, refreshing and so delicious. The lemon poppyseed dressing truly makes the dish and is a winner every time. Here’s a video on exactly how I made it. Hope you love this salad as much as we do!

What You'll Need:

+ 2 hearts romaine, chopped

+ 16 oz. container strawberries, sliced

+ 1/2 red onion, thinly sliced

+ 1/4 cup goat cheese, crumbled

+ 1 cup pecans, roughly chopped

+ Handful of fresh mint, about 10 leaves, finely chopped

Lemon Poppyseed Dressing:

+ 1/3 cup EVOO

+ 2 tbsp. fresh squeezed lemon juice

+ 1 tbsp. white balsamic

+ 3 tbsp. honey

+ 1 tsp. dried mustard

+ 2 tsp. poppy seeds

+ Salt & pepper to taste


1. Chop the Romain lettuce and pecans. Slice the strawberries, red onion and mint.

2. Wisk together all the dressing ingredients.

3. Combine everything, toss and enjoy!
