this is the perfect tzatziki recipe for entertaining

Andrew and I traveled to Santorini in 2015 and had the BEST Tzatziki ever. We actually learned how to make it during one of our favorite experiences there! It was a catamaran tour from a local who taught us how to make an authentic perfect tzatziki and it only required a few ingredients. I’ve tweaked it to our liking and it’s one of our favorite dips of all time. Highly recommend trying it out – Enjoy!

What You'll Need:

+ 1 1/2 cups Full fat Greek yogurt

+ 1 Whole cucumber (or 3 Persian cucumbers), finely grated

+ 2 Cloves garlic, minced or pressed

+ Juice of ½ Lemon (1 tablespoon)

+ 1 teaspoon white vinegar

+ 1/2 teaspoon kosher salt

+ 2 tablespoons extra-virgin olive oil plus more for serving

+ ½ teaspoon dried oregano plus more for sprinkling

+ Fresh mint and/or dill (optional to mix in or to use as garnish)

Steps:

Yields about 2.5 cups – Serves 8
1. Using a cheesecloth or a doubled layer of paper towels, squeeze and strain the grated cucumber over a small mixing bowl until most of the liquid has released. Discard the cucumber juice (or see tip below!) and set the strained cucumber aside.

2. In a large mixing bowl, combine the greek yogurt, garlic, lemon juice, strained cucumber, vinegar, olive oil, salt, oregano and fresh herbs (optional).

3. Using a spoon or rubber spatula, gently stir until just combined and refrigerate for a minimum of 2 hours. Serve and top with a drizzle of olive oil, sprinkle of dried oregano and fresh herbs if desired.

Important Tips
* If you are making this the day before, you’ll want to be sure to combine all the ingredients EXCEPT for the strained cucumber ahead of chilling. Be sure to add the strained cucumber into the greek yogurt mixture a couple hours before serving to avoid any additional moisture being released overnight.

* You can discard the cucumber water, or you can use it for a juice or a quick Spicy Cucumber Margarita – which I highly recommend!
